3 quick and easy healthy lunches  

Hi guys ! 

Being a foodie but trying to be healthy at the same time can sometimes be difficult . But instead of depriving yourself , opt for your favorites in a healthier way ! 

Here are some of my go to lunches: 

  
1. Sweet potato wrap 

This is vegan : 

I used a store bought basil and sundried tomato wrap .

  • Spread your favorite sauce as a base .
  • Spread mashed sweet potato on wrap. 
  • Shred lettuce and place on top of potatoes.
  • Cut some avocado , tomatoes , carrots , etc and fill inside . 
  • Close up and enjoy! 

    2. Colorful lunching 

      
    This one is so quick and so delicious ! 

    • Cut butternut up in cubes . 
    • Dice some red onion and green pepper.  
    • Spread on tray and drizzle some olive oil . 
    • Sprinkle with salt , chillie flakes and a tiny bit of cinammon. 
    • Preheat your oven to 180 degrees. 
    • Time: 20-30 mins .

    Tip: If you’re in a hurry , microwave your butternut in a bowl for 7 mins with a splash of water before putting it into the oven , it reduces the oven time ! 

    3. A plateful . 

      

    • Cut a sweet potato in half , drizzle a bit of  olive oil over with a pinch of salt and cinammon. Place in oven for 40 mins .
    • For the corn : sauté some onions in olive oil . Add the frozen corn in . When the corn is soft add some cinammon, salt , a little bit of chili powder . 
    • For the side I made a little ‘salad ‘ with lettuce and purple olives !

    How to make homemade Almond milk. 

    Almond milk is a delicious, nutritious, guilt free milk that is a great substitute for cows milk.

    It is so easy to make and there are no added preservatives so you know it’s all good for you ! 

      
    INGREDIENTS :

    1 cup of almonds 

    3 cups of water 

    A pinch of salt 

    And just a little dash ofvanilla extract 

    METHOD :

    Soak the almonds overnight in some water. The following morning just add the almonds in a blender with the 3 cups of water, salt and vanilla extract and blend until a white milk is formed. 

    Over a bowl Strain the milk in a bowl with a cloth to remove the pulp. This pulp can be spread into a baking sheet for later use in other recipes! 

    The now strained milk is your now delicious almond milk which will last approximately a week in an airtight container !
